Azimuth is the angle measured counter clockwise or clockwise from north or south (from 0 to 299 degrees). Bearing is angle measured from north or south to east or west (0 to 90 degrees).
You can have an assumed azimuth or true azimuth of a line.
You can establish a line with assumed azimuth by occupying one point and have a foresight or back sight on the second point with an assumed (of course) azimuth of your choice. Example: occupy point A and set the horizontal angle of your TS to 0 degrees and have a foresight on point B.
You can also establish a line with a true azimuth by conducting solar or stellar observation. You can search the net for this. :)

You can introduce any azimuth , angle only, when setting up in a total station for your backsight.Ā Say you do not have any bonafied reference at the time of your survey. You could key in an assumed point such as N1000, E1000, Elev 100 and for a backsight you could use a natural target such as a building corner or a fixed object together with your compass and give that backsight an assumed azimuth of say 180 d 00' 00" (south) or 0d 0'0" (north)....you have an island of information good unto itself....if you need to tie that to a reference system and give your island real world x,y,z then you will have to find reference monumentation, once found, rotate,translate,adjust height accordingly.

Not sure of the total station your using and if it will know where it is without introducing some kind of reference.
